The “Safari” is the flagship of the Ridgeback winery, made in very small quantities. A blend of 36% cabernet franc, 28% Cabernet sauvignon, 26% Merlot, and 10% Petit verdot, it is very inviting, warm, with lingering aromas of chocolate, dark fruits and blackberry on the nose; the palate is smooth and forceful yet elegant with fine grained tannins and multilayered flavors. Drinks so well right now.
